How coconut oil is made
A thousand coconuts weigh about 1,440 kilograms but give only about 70 liters of oil.

The short version
Most coconut oil comes from copra, which is coconut flesh dried in the sun, over fire or in kilns. Presses squeeze the oil out of the copra, and processors often add a solvent to recover more. The crude oil is refined, bleached and deodorized to remove flavor and extend shelf life, while virgin oil skips most of that.
-
Pick mature coconuts
Coconuts can be picked anywhere from 2 to 20 months old. Copra from immature nuts is harder to work and gives less oil, so picking at the right age matters to the yield.
Goes in -
Dry the flesh into copra
The flesh is cut from the shell and dried with fire, sunlight or kilns. Good copra keeps its moisture low, because damp copra spoils and the oil goes rancid.
moisture below 6%
-
Press the copra
Rotary mills and expellers squeeze the oil out of the dried flesh. Heated hydraulic presses pull out practically all of it, more than 60 percent of the dry weight.
Goes in -
Wash the cake with solvent
Many processors soak the pressed cake in hexane, a solvent that dissolves out up to 10 percent more oil than presses alone. What is left is a high-fiber meal that is fed to ruminants.
-
Refine, bleach and deodorize
Crude oil carries contaminants and is unfit to eat. Heating and filtering strip out free fatty acids, color and smell, leaving a neutral oil with a longer shelf life.
-
Fill the containers
The finished oil is a clear liquid when warm and a white solid below about 24 °C. It goes into jars, drums and tankers.
Worth repeating
- Coconut oil melts at about 24 °C, so a jar sitting in a warm kitchen switches between liquid and solid.
- A wet process that skips copra and starts from fresh coconut milk gives about 10 to 15 percent less oil than the dry route.
