How condensed milk is made
Sweetened condensed milk lasts for years unopened because so much sugar leaves microbes with nothing to drink.

The short version
Milk is cleaned, standardized and heated, then a vacuum pan boils off roughly 60 percent of its water. Sugar is dissolved into the thick liquid until the sugar-to-milk ratio hits 9 to 11. Sugar's pull on water starves microbes, so the cooled, seeded milk keeps for years in a sealed can.
-
Clean and standardize the milk
Raw milk is clarified and its fat is adjusted against the other milk solids, so every batch has the same recipe.
Goes in -
Hold it hot for seconds
A short blast of heat destroys some microorganisms, cuts down fat separation and slows oxidation.
85 to 90 °C
-
Boil off the water
Water is evaporated under vacuum, which lets milk reduce without scorching or curdling. Roughly 60 percent of the water leaves.
-
Dissolve in the sugar
Sugar is added until it reaches a ratio of 9 parts sugar to 11 parts evaporated milk. The sugar raises the osmotic pressure of the liquid, which stops microorganisms from growing.
9:11 sugar to milk
Goes in -
Cool and seed crystals
The sweetened milk is cooled and lactose crystallization is deliberately triggered. This keeps the lactose crystals tiny, so the finished product feels smooth and not gritty.
-
Seal it in cans
The thick milk is filled into cans and sealed. Unopened, sweetened condensed milk can last for years without refrigeration.

Worth repeating
- Gail Borden got the idea for his vacuum pan from Shakers who used one to condense fruit juice.
- The Union Army ordered huge amounts of condensed milk, and a 10-ounce can held about 1,300 calories.
- Borden demanded that farmers wash cows' udders and scald their strainers, rules that mattered as much as the pan.
