How white chocolate is made
White chocolate has no cocoa powder in it at all. It is cocoa butter, sugar and milk.

The short version
Makers press the fat out of cocoa beans as cocoa butter, and the dark solids go elsewhere. The butter is deodorized, then mixed with sugar, milk solids and flavor into a paste. Steel rollers grind the paste to powder, a conche kneads it warm for hours, and tempering sets the crystal that gives a glossy snap.
-
Deodorize the butter
Pure cocoa butter pressed from the bean can taste unpleasant. Before use it is partly deodorized with steam under vacuum or with solvents, but not fully, or it would lose all its taste.
Goes in -
Mix the base
Cocoa butter, sugar, milk solids, an emulsifier such as soy lecithin and flavoring are mixed into a rough paste. Vanilla is the usual flavor.
-
Refine with steel rollers
The paste passes through large steel rollers set at ever narrower gaps, which crush it to a dry powder with tiny particles.
-
Conche it warm
A conching machine mixes and kneads the chocolate for hours, changing its flavor and texture. White chocolate is conched cooler than any other type, because heat triggers Maillard browning that adds off flavors.
40 to 50 °C
-
Standardize the flow
Flavorings, emulsifiers or extra cocoa butter are added to set the viscosity and taste, so the batch works in automatic molding or coating equipment.
-
Temper it
Chocolate is cooled until cocoa butter begins to crystallize, then warmed to melt the unstable crystals and leave only the stable ones. White chocolate tempers at temperatures lower than dark chocolate and needs longer cooling because of its milk fat.
-
Mold and wrap
Tempered chocolate is poured into molds, cooled until set and wrapped.
Worth repeating
- International standards require white chocolate to hold at least 20 percent cocoa butter and 14 percent milk solids.
- The Oxford English Dictionary traces the term white chocolate to a December 1917 issue of Scientific American.
- White chocolate is the most challenging type for manufacturers because it is soft and thick.
