How ice cream is made

Ice cream is a foam of air, ice crystals and fat globules, frozen while it is being whipped.

The short version

A factory blends milk, cream, sugar and stabilizers, pasteurizes and homogenizes the mix, and ages it cold. The mix is then frozen in a scraped-surface freezer that whips in air while ice crystals form. The soft ice cream gets flavors and swirls, is filled into containers, and is hardened in a blast freezer.

  1. Blend the mix

Milk, cream, sugar and small amounts of stabilizer and emulsifier are blended in a big tank. The result is an oil-in-water emulsion that will turn into a foam when frozen.

  2. Homogenize it

The mix is forced through a narrow gap at high pressure, which breaks the fat globules into tiny droplets. Smaller droplets give a smooth body that does not feel greasy.

  3. Pasteurize the mix

The mix is heated to kill pathogens, then pumped on to the next step while still warm.

  4. Age the mix cold

The mix rests in a cooled tank for hours. Stabilizers hydrate and fats begin to crystallize, which helps it hold air and melt slowly.

  5. Whip and freeze at once

In a continuous freezer, the mix runs through a chilled barrel while blades scrape it off the wall. Air is pumped in, and ice crystals form small. The product leaves as soft, thick cream at a temperature below the freezing point of water.

  6. Fold in flavor

Vanilla, chocolate, fruit sauces and cookie pieces are added through a feeder as the soft ice cream flows toward the filler.

  7. Fill and harden

Containers are filled and sent through a blast freezer or a hardening tunnel so the center freezes solid fast. Fast freezing keeps the ice crystals small and the texture smooth.

Worth repeating

  • Hannah Glasse's 1751 cookbook The Art of Cookery included a recipe that told the cook to add a handful of salt to the ice.
  • Salt makes ice colder as it melts, which is how cream could first be frozen and not merely chilled.
  • Soft ice cream has more air mixed in than hard ice cream, which cuts its cost.
