How frozen pizza is made

A frozen pizza crust needs its own waterproofing, or the sauce soaks it into mush.

The short version

A factory mixes and rolls dough into crusts, seals them with a thin coating so sauce cannot soak in, then adds sauce, cheese and toppings. Many lines bake the pizza on a conveyor before freezing it hard, wrapping it and shipping it cold. Self-rising crusts go in unbaked and rise in the buyer's oven.

  1. Mix the crust dough

Flour, water and salt are combined with yeast or baking soda and a little oil. Self-rising crusts carry leavening agents so they puff up in the buyer's oven the way a pizzeria crust does.

  2. Press it into rounds

The dough is rolled or pressed flat and cut into discs, thick or thin depending on the product.

  3. Seal the crust surface

An edible sealing agent goes on top of the crust. Without it, sauce leaks into the dough while the pizza bakes at home and the crust turns soggy.

  4. Spread sauce and cheese

A line of machines drops sauce and shredded cheese onto each crust. Cheap pizzas often use a cheese analogue designed to melt well and stay chewy.

  5. Add the toppings

Meats and vegetables are scattered on top. The most popular varieties carry both, such as pepperoni or sausage with peppers and onions.

  6. Bake on a conveyor

Many lines carry the topped pizzas through a tunnel oven before freezing. Self-rising crusts stay raw at this point and finish in the buyer's oven.

    150 to 232 °C

  7. Freeze it solid

Pizzas ride through liquid nitrogen or an air-blast freezer. Faster freezing makes smaller ice crystals and keeps the food's texture, and frozen food stops spoiling once it is below about minus 9.5 °C.

  8. Wrap and box

Vacuum sealing helps stop moisture from the air from creeping into the crust. The wrapped pizzas are boxed and moved through the cold chain.

Worth repeating

  • The first recorded patent for frozen pizza was filed in 1950 by Joseph Bucci.
  • Totino's started mass-manufacturing frozen pizzas in 1962 and sold to Pillsbury in 1975 for US$22,000,000.
  • In the 1970s competition drove makers to swap real cheese for cheese analogues and to stretch the tomato sauce.
